You mention on your web: "Faster processing due to linking to Zlib 1.1.4 object files for compression and decompression routines"
Does it mean that I'll have to distribute these files with my application?

They link directly into the application just like dcu's. You don't need to distribute them.

And is there any information, how faster is VCLZip Pro compared to the previous version?

That is very difficult to say since different amounts of memory, cpu speeds, and types of data can effect the differential quite a bit. But, I was asking one registered user just today what kind of difference he saw and he said it was about 30-33% faster in his case.
I have found that it seems like the difference is a little less, the faster your machine, just because the hardware can make up for the slower app.

Regarding performance: Can you update the precompiled demo (zipp.exe) in the Delphi demo for v3, as I downloaded the v2 and v3 demos to compare performance without having to install the components and found that the zipp.exe in the v3 download is the same as for v2.

I have put the precompiled demo by itself out there for you to download. Either go to the website and go to the Pro download section, or just download this: www.vclzip.net/demoexecutable.zipKevin
